Bagels revisited! (Grrrrrr)

So I have a love affair with the bagel  that is probably not healthy! I love almost any kind of bagel. Except the everything bagel… ew.  My fav is jalapeño cheddar bagel. I used to get them from safeway but they never had enough jalapeños for me. Plus the boys love bagels too but i wanted to be SURE I knew what was going in to them. They Love cinnamon raisin bagel so i thought. hmm how cant i beef up the goodness? hmmmm here is my simple bagel recipe with a couple of my favorite variations.

1 cup plus one TBS of warm water

1 1/2 TBS honey

3 cups of bread flour ( Sub: I exchanged 3/4 cup of bread flour for whole wheat  in the cinnamon raisin bagels and the kids didn’t notice anything)

1 1/4 tsp of salt

1 1/2 tsp bread machine or active dry yeast

toppings: instant minced onion, sesame seeds, poppy seeds, old fashioned oats or for me some shredded cheddar and a jar of jalapeños.

*For cinnamon raisin bagels add 1/2 cup of raisins and add 1 1/2 tsp of cinnamon in when you add salt.  You can make other berry bagels buy switching the raisin for dried cranberries or dried goji berries or dried dingle berries.. i dunno… you get the picture.  what ever floats your boat. Oh and get rid of the cinnamon.

You will also need

2quarts of water

1/3 cup of baking soda or 3 tbs of sugar

One egg white mixed with one tbs of water.

1) measure all your stuff and hit the dough cycle on your bread machine.  Dont put the toppings in!!! Pull the dough out after 50 in the cycle with lightly floured hands.

2)  grease a cookie sheet and cut the dough in to 10 pieces.  shape each piece into a 3 inch circle poke a one inch hole in the center using thumbs. smooth into a bagel shape using your fingers. do it to all 10 an dpu them on a cookie sheet. cover and let rise for 20 min in a warm place.

3) Heat your oven to 450. Heat 2 quarts of water  to boiling add 1/3 cup of baking soda or 3 tbs of sugar.  I like the baking soda. Lower 2-3 bagels in tot the water for 30 seconds, turning once after 15 seconds. Remove with a slotted spoon.

4) use a pastry brush to brush the egg white and water on the bagels.  Then put your toppings on. Bake on a greased cookie sheet for 8 min or until yummy looking.  LET THEM COOL!  But as soon as you can, Toast that baby Up and mac down. it is so good.  Yummm I think i will go have another one.

Happy mom = a better world for all.

what do you get when you combined a box of pancake mix, a 2 lb box of strawberries and whipped cream? A happy momma!

the night before chop up your straw berries and mix them with a 1/2 cup of sugar.  cover and pu tin the fridge  till
morning.

Make your batter as per the box instructions for waffles.

I happen to have a hand me down  cheap belgian waffle iron soo I am lucky.

Spray your iron with no stick spray. I dont care if it says it is non stick they will stick if you dont spray it.  Ok fine dont spray it see what happens. I don’t care.  they are your waffles. I pour about a cup of batter in to my iron, close it and let it go for  FULL 5 min. NO PEEKING! if your waffle iron is stil letting steam out after 5 min give it another min or 2 to  let the steam calm down. Not to much though or you will have burnt waffles. Blah

Ok waffles are done take them out of the iron put them on a plate and top with 2 scoops or strawberries and some whipped cream.  the only thing that could make this better would be some bacon. YUM!

Now i know you are saying ” wth sd2cb? i know how to make waffles! what do you think i am an idiot?” No I don’t. I think that some people  *cough* my husband *cough* are very uhm… brainy… and need very detailed instructions on doing simple things… even though i doubt any dudes read this blog maybe a few women need that type of instruction. either way there it is… now go to goodwill or salvation army and find your self a poor lonely unwanted waffle iron… i think that’s where my mom got the one she gave me. stop looking at the waffle picture and go!!!!

My pot of posole

Ok so you make it in a slow cooker so it isnt really a pot but…YUM I could eat bowls of this stuff for weeks. I got a new slow cooker for my birthday since I murdered my old one  ( on accident). I ❤ My friend Kim.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1-2 lbs boneless pork shoulder ( I used already cut up pork stew meat)
1Tbs cooking oil
1 medium red or green sweet pepper cut into1/2 in pieces
1 medium tomato chopped ( I am lazy i used 1 can of diced tomatos)
1/2 cup of chopped onion
4 cloves of garlic minced
2 14.5 oz cans of golden Hominy drained
1 4oz can of diced green chilies
1 tablespoon of chili powder
1/2 teaspoon of dried oregano crushed
2 14 oz cans of chicken broth ( I used one whole box which is 32oz but eh it wasnt to much more)
Tortilla chips, mexican cheese (the big round white thing not the kraft cheese blend), Lime wedges and chopped cilantro are optional but I highly recommend them. YUM.

1. trim the fat from the meat and cut the meat in to 1 in ch cubes. In a e skillet brown the pork half at a time drain off the fat.
2. transfer the pork to your  slow cooker. Add sweet pepper, onion, tomato, garlic, hominy, chile peppers, chili powder and oregano and then pour the broth over all of that.
3. cover; cook on low setting for 8-10 hours or on high for 4-5 hours.

when it is done put some in a bowl squeeze some lime juice on add some cheese and a sprinkle of cilantro and mmmmmmmm you will be in heaven.

Pelmeni a.k.a. yummy meat stuffed dough.

So I always have a storage of ground beef in my freezer. I wanted to make something new for dinner. Something other then tacos or burritos or meatloaf ya know? so I googled “ground beef filled….” then i got this.  They are Russian yummies.  I am rambling.  I am not Russian in heritage ( that i know of) but my husband is. they eat a dish called veraniki  in his house  growing up. So he wanted  to try pelmeni. After much research on pelmeni i came up with this combo.

Dough

2cups of flour (start with 2 you might need more depending)

2 eggs

1/2 cup of water or milk

1/2 tsp of  salt

Mix the flour, eggs, water or milk and the salt. Let the dough rest 30 min to 1 hour and make the filling.

Filling

1lb of ground meat ( I used all beef but most of the recipes i saw used 1/3 ground pork and 2/3 ground beef)

1 carrot diced very very fine you could even shred it

1 medium onion diced.

2 cloves of minced garlic

1 tsp of black pepper

2 tsp salt

I cooked the carrot with the onion and salt and pepper. Then I added the garlic at the last minute. Let that cool a little then mix it with the uncooked meat. Add more 1tsp of salt and pepper to the meat mix too.

Roll out the dough thin ( no not paper but thin) You will need more flour it will try to stick to your table or counter. then cut out as many circle as you can ( I used an empty green bean can they say it is the perfect size). fill each little circle with a tsp of meat filling. Lightly touch the edge of the dough circle with a finger dipped in water and seal the whole baby up. Make sure you do it good so they dont pop open in the broth.

Broth

1 box of beef stock and an equal portion of water

2 bay leaves

a handful of peppercorns

Bring this mix to a low boil and add 6-7  pelmeni let em boil for 8 min. take em out with a slotted spoon. and place them in a very low oven while you finish the others.

You can eat these with their broth or with sour cream. Some people say soy sauce or mustard or vinegar but… thats not for me.  Also shots of Vodka are good with these.  🙂

cluck cluck yum

So in my kitchen there are usually 2 main meats, boneless skin less chicken breasts and beef of one form or another. usually ground. We also like pork but it is maybe once a week.  so being that we are between paychecks again i am working on making meals again with what we have here at home. scrounging thru the freezer i found some ground chicken… ” hmm what can i do with this? not enough for burgers for the family it is only a pound… hmmm.” then it clicked I saw rachel ray do a recipe with ground chicken on a rerun the other day. chicken parm meatballs mmmmm. So here it is.

1 lb of ground chicken

1 box of frozen spinach thawed and well drained. ( really well drained. Wring it out in a towel)

1/2 cup of bread crumbs ( I used panko because that is what I had.)

1/4 cup of milk

1/2cup shredded parm cheese

1 egg

1 clove of garlic minced

1/8 teaspoon of nutmeg

1 onion ( for grating)

3Tbs tomato paste divided

Salt and pepper to taste

preheat your oven to 400 and like a cookie sheet/ baking sheet with parchment paper.

“Place chicken and spinach in bowl. Grate 1 clove of garlic into bowl or finely chop and add garlic. Grate 3-4 tablespoons of onion directly into bowl. Combine 1/2 cup of cheese and breadcrumbs with nutmeg and barely moisten with milk, no more than 1/4 cup. Sprinkle the bread-cheese mixture into chicken then add egg, parsley, salt and pepper and 2 tablespoons tomato paste.

Combine 1 tablespoon of tomato paste with 1 tablespoon EVOO in small bowl. Mix and combine the chicken with breadcrumbs and section the meatball mix into quarters. Then roll 3 large balls from each section. Arrange balls on baking sheet as you work. Using a pastry brush, brush meatballs with tomato paste and oil mixture and roast for 18-20 minutes”

Best dang bread EVER!

Ok so in the 2 years i have had this bread machine i have tried many ( and by many i mean hundreds.) of bread recipes.  None of which have fit me perfectly. I  mean they were ok and edible and all but nothing like this one. yes I know it doesn’t use whole grains.. and yes I know  it has milk and butter and salt and… yeah i know… but that is why it doesn’t taste like a brick of cardboard. I don’t know about you but i hate cardboard with my grilled cheese or turkey club BLAH! so here it is.

It is actually very very simple. I used this recipe from king Arthur’s flour company ( http://www.kingarthurflour.com/recipes/bread-machine-breadeasy-as-can-be-recipe). I made a few changes to mine. Just a couple don’t freak out.

For large (1 1/2lb.- 2lb.) machine
1 cup lukewarm water
1/3 cup lukewarm milk

ok 1st big switch up.

I used buttermilk powder here.(http://www.sacofoods.com/culteredbuttermilkblend.html) Because I was out of milk yesterday. It is easy to use but you can sub real buttermilk too just use and equal amount of buttermilk. I highly suggest using buttermilk if you can. YUM.

3 tablespoons butter or margarine
3 3/4 cups King Arthur Unbleached All Purpose Flour

2nd switch up

Here I used all bread flour. But hey  whatever you have I guess.
3 tablespoons sugar
1 1/2 teaspoons salt
1 1/2 teaspoons active dry yeast ( I used bread machine yeast whatever)

So the recipe on the web site says to do the whole thing in your bread machine.. I didn’t I put my machine on the dough cycle and plopped the finished dough in my standard bread pan ( greased a little) and let it rise for 45 more min in a warm spot.  then i tossed it in to  350 DEGREE oven and baked for 35 min.  when it is done  take it out of the pan and let it cool for AT LEAST 30 min but if you are like me  30 min will be all you can wait.

J.O.B. Taco salad

In my family we make taco salad. no not that crap in a taco bowl. This is salad in a bowl.  Ok here is it.

Cook up 1.5 – 2lbs of ground beef  with salt and pepper.

Get bag of iceburg salad mix stuff the one with cabage and carrots.

2 tomatos

2 ripe avocados

a cup of cheddar

nacho cheese doritos

and some ranch dressing

Pile some salad in your bowl top with a scoop of meat a sprinkling of cheese some diced tomato and dice avocado. crumble some chips on top and  add some ranch. YUM. I cant wait to eat it. Now this is a top secret family recipe.  please dont share it with to many folks. And yes you may say “EW sd2cb that sounds gross…” but it is good and can be healthy if you make.

This hams for you

So i made my first easter ham this past sunday. Husband and sons said it was the best ham they had ever had. MMMM. Here is my glaze recipe

1 cup Dr pepper

1 cup dark brown sugar

4 tbs orange juice ( dont use concentrate it makes it taste funny. we like floridas natural)

4 tps of mustard ( i used yellow cause that is what i had but you can use dijon too)

get all your stuff in a pan and heat it in med hi heat till it bubbles. stay near this cause it will burn and that is yucky. when bubble-ige occurs turn you heat down to med low and let it simmer till it get syrupy. let it cool.

when you ham is about 1/2 done cooking brush this some on and recover. I mean like paint it on. but only like 1/3 of it. It will be good.  when the ham is all done right when you take this baby out of your oven pain it again with another third of the glaze and let the ham rest for 30-40 min.  serve the rest of the glaze in a bowl and the table for  drizzling over the ham if you want this was divine.

i have a pic but i have to upload them I will update this as soon as i do I just really wanted to get this all out to you before i forgot. 🙂  next stop lasagna Town…. who’s with meh?

Whoops ran out of syrup!

So  we ran out of regular maple syrup and we cant get some more till payday.  That means no pancakes right? WRONGO! I made some homemade strawberry syrup with some frozen berries I have stuffed in the back of the freezer. It is Yummy. Maybe i will make chocolate chip pancakes for the syrup to go on. Or banana pancakes. MMMM.

Berry syrup

2 cups fresh or frozen berries. If you are gonna use strawberries and they are big slice em before measuring them.

1/2 cup of water

2 cups of sugar ( yes 2 don’t gawk at me just do it think of all the other crap you eat everyday. )

1-2 tbs of lemon juice.

Put it all in a saucepan.  bring to a boil then turn the heat down and simmer them  for a full 5 min.  Stir occasionally.  Let it cool and put it in glass containers of some kind then to the fridge. I had 2 old syrup jars readily available. Or put it on your pancakes or ice cream yum. Oh yeah I blended mine in the blender so I wouldnt have chunks. I wanted the smooth consistency

Cookie Monster Cake.

So My youngest can say very few words that can be understood in english. Cookie is his favorite and sooo is cookie monster from sesame street.  So for his 2nd birthday ( yes i cannot believe he is already turning 2)  I thought” hey a cookie monster cake can’t be that hard right????  I now have a couple bald spots on my head now.  But here goes.

i started off with a simple boxed cake mix. strawberry is what these boys like. i made one 10 inch round in a dreaded spring form pan.  Let that baby cool completely before frosting.

get thee one tub of classic white frosting and dye that baby blue… for me it took one whole bottle of blue liquid food coloring. But some one told me that food coloring paste works better for frosting… good to know for next time.

get another tub of white for the white of his eyes…

You will also need oreos and since there will be left over you will be obligated to eat you might as well get double stuft.

i made cookies fur by dragging a fork lightly over  the blue frosting. when that is all done i scraped the white stuff out of  a row of cookies

blend those babies up in the blender till they are crumbs. i made a stencil out of wax paper laid it on the cake. If I didn’t  his smile would have been really messy.  I sprinkled it in the stencil.  lifted it off and boom. Instant cookie smile.

Piping the eyes was not as easy as it looks might be easier for you but i suck at piping so yeah

then i just stuck some oreo’s on for the black part of his eyes.   Done.

it was a lot simpler then the race car cake.  I hope I get to make another cake soon. NOT MY OWN though… that always makes me grumpy.
